Wrap
3 cups bread flour
2 tsp baking powder
1 1/2 tsp salt
1/3 cup + 1 tbsp vegetable oil
1 cup + 1 tbsp boiling water
Direction
- Mix all the dry ingredients
- Add in the vegetable oil
- Mix with fingers till you get ‘sand’ texture
- Pour the boiling water
- Mix with a spatula, then knead for a while till all incorporated
- Divide into 6 portions, round each portion to a ball shape
- Cover them with a cloth and let them rest for 15 minutes
- Take one ball, then flatten it to a disc shape
- Heat up your non-stick pan
- Place the disc onto the pan, wait till big bubbles appear
- Flip it, and cook for another 1 minute
- Repeat to the rest of dough
Black Bean Brown Rice
- Heat up the wok and add some olive oil
- Add 1/4 tsp cumin and stir fry till fragrant
- Add some chopped onions
- Add some corns
- Add some cooked brown rice
- Add some black beans
- Sprinkle with some salt + pepper + smoked paprika + chilli powder to taste
Assembly
- Take one wrap
- Place some smoked barramundi slices
- Add some black beans brown rice, guacamole, and some mayo + sweet chilli sauce
- Wrap and enjoy!
